Pearl Barley Risotto
Serves 4 - 6
Ingedients:
1 lb. cooked barley
2 shallots, minced
2 Tbsp. olive oil
3.5 oz. chicken stock
3.5 oz. heavy cream
4 Tbsp. butter
¼ cup Parmesan cheese
3 Tbsp. chives, chopped
Preparation:
1) Sweat Shallots in Oil
2) Place cooked Barley in with shallots
3) Add the stock and cream
4) Add the cheese and butter
5) Cook and reduce till it is thick
6) Finish with butter and chopped chives
7) Season with salt and pepper to taste
